What to serve with a blue cheese souffle?
I am doing the blue cheese souffle served with ??????
and then followed by steak in peppercorn sauce with dauphinoise potatoes, asparagus with coriander and a rocket & melon salad
dessert is a lemon cheese cake
so what to serve with the souffle? i don't want to serve it with a salad as i am doing the salad with the mains already and i want it to look good on the plate
Fruit always goes nicely with cheese.
I would serve a grape reduction alongside the souffle.
here is the recipe...
To make grape reduction:
In a 1 1/2-quart saucepan simmer grapes in water, uncovered, 30 minutes. Pour mixture through a fine sieve into a bowl, pressing hard on solids to extract as much liquid as possible. Transfer liquid to cleaned pan and gently boil until reduced to about 1/2 cup. Keep sauce warm, covered. Sauce may be made 1 day ahead and chilled, covered. Reheat sauce to warm before serving.
*just a lil bit of advice(u dont have to take it)...i personally wouldnt do a complex salad with your main meal.i would keep the steak with peppercorn sauce,dauphinoise potatoes and asparagus.you dont want to distract to much away from the 'main event' which is the steak,and the flavours may get a bit confused if you have too many ingrediants on the plate.
